The Sablés cocos are made from sweet shortcrust pastry. It is said that this was first made in France in the 19th century and takes its name from its unique texture. The butter is incorporated cold by rubbing it into the flour and sugar. This way, the butter coats every last grain of flour and sugar. Once out of the oven, these grains separate easily, which explains that delicious melt-in-the-mouth feeling.
